Polish Potato Pancakes

Ingredients

1kg starchy potatoes (Yukon gold are good) – about 6 medium potatoes

2 onions
-
2 garlic cloves, optional

2 eggs
-
2-3 tbsp all-purpose flour

1 tbsp sour cream, optional

salt to taste
-
pepper to taste
-
canola oil for frying
Notes
For sweetened version of these potato pancakes, skip the garlic and add a teaspoon or two of sugar.
Instructions

Peel potatoes and onions. Grate them using "small" holes.

Pour the grated mass onto a strainer and gently press. Keep the remaining water!

Mix potato/onion mixture with eggs and flour. Add minced garlic (optional).

Take the container with the excess water, remove the water gently, leaving potato starch at the bottom. Add that starch into the potato pancake mixture.

Add cream, salt and pepper and fry on both sides until golden. Serve with sour cream.
